Ingredients : 4 pcs. duck breast with skin, 4 tablespoons brown sugar, 2 tablespoons water, 2 tablespoons white vinegar, 1 onion, 4 oranges, 4 tablespoons butter, 1/2 red chili pepper, salt, pepper
Preparation : Wash the duck breast well and score with a knife on the skin side, taking care not to cut into the meat. Season with salt and pepper and place in a pan with a little oil, heated, on the skin side. Leave for 8 min. and turn on the other side for another 8 min. Remove and leave on a plate. In the meantime, peel the oranges and grate the zest without leaving the seeds in the juice. In a pan, sauté the finely chopped onion in butter. In a bowl, mix the brown sugar with water and let it caramelize. Add the vinegar, sautéed onion and orange juice and cook for another 10 min. until the sauce is reduced by half. Add the chili pepper and cook for another 5 min. Slice the duck breast diagonally, place on a plate, and pour the orange sauce over it. Serve with baked potatoes and fresh salad leaves.
