Ingredients:

1/5 kg of fattier beef or mutton, 1/2 kg of full-fat yogurt, 2 eggs, 1/2 kg of rice, 250 g of thin egg noodles, 3-4 mint leaves, 2 tablespoons of oil, salt, pepper, saffron.

Preparation method :

It is a traditional Arabic dish. Boil the meat in 1.5 l of water until tender. Remove from the water and cut into suitable pieces. Add 1/2 kg of yogurt mixed with 2 eggs to the remaining water and let it simmer over low heat. When the mixture thickens, add the chopped meat and let it simmer for 5 minutes. When it is ready, add salt and mint leaves. Separately, prepare a mixture of rice and thin noodles. Fry the noodles in a little oil until golden brown, then add the rice, water and put a lid on and let it simmer over low heat until all the water has disappeared. You can flavor this mixture with saffron, salt and pepper. Serve the soup in a bowl, and in another bowl, place 3-4 tablespoons of rice with noodles.
