Roast chicken:

  • 1 chicken breast
  • 50 ml soy sauce
  • 1 orange
  • 2 tablespoons honey
  • a pinch of ginger
  • 1 tablespoon balsamic vinegar

Cranberry sauce:

  • 100 g blueberries
  • 50 ml red wine
  • 1 tablespoon brown sugar
  • 4 tablespoons lemon juice
  • 1 cinnamon stick
  • 1 tablespoon starch
  • white pepper
  • salt

Preparation method

Cut the chicken breast into strips. Make a mixture of soy sauce, orange juice, honey, balsamic vinegar and ginger. Place the chicken in this mixture and leave in the refrigerator for 2-3 hours. When the chicken is marinated, place it together with the marinade in a tray and put it in the oven, over high heat, until the sauce has caramelized. In a saucepan, place the cranberries, wine, lemon juice, brown sugar and cinnamon. Bring the mixture to a boil for 2-3 minutes. Add salt, white pepper and starch to this sauce and stir continuously until it thickens. Then let it cool. Place a few pieces of chicken in a wide plate and pour the cranberry sauce over them.
